This is What I Cooked Last Night- Ginger Glazed Mahi Mahi

I am definitely a fish girl, and this was yummy, but I think it would be equally as good, or better, on chicken (wings!  Yerrrrmmmm).  Anyway, I used this recipe and followed pretty close.  Do you have these things in your pantry? Holla if you love a store brand!!


Of course you do!  Now you have a new recipe to fall back on.  Actually the recipe calls for fresh grated ginger root but that was not handy in my veggie drawer so I used ground ginger.  It wasn't as zesty as I imagine the fresh is, but whatreyougonnado.

Other adjustments I made~ I did not salt and pepper the fish, but you should.  Also, I really much prefer to broil fish so I stuck the fish (after marinating but without any oil) under the broiler for 5 minutes on each side.  Brushed the glaze on and it was delicious and super easy!

Added a salad of spinach, carrots, celery, feta and craisins...


There's the chopper that I heart so much!  I also cooked up a box of whole wheat sundried tomato and herb couscous (Marakesh Express is so delicious).


Such an easy, healthy and yum dinner for a Tuesday night.

Okay, I haven't made fish in awhile and Baylor used to eat it up but last night he took a bite of it and said "I don't like food."  Uggh, this child eats everything that we eat and I don't wish for that to stop anytime soon.  But then he shrugged his shoulders and said "but I like couscous."  Yay!
